Greenwood, SC - When people think about the annual South Carolina Festival of Discovery, the food that most likely comes to mind is barbecue.
However, this summer, the Uptown Greenwood based festival will feature a food competition that goes beyond brisket, pulled pork and other barbecue-centric confections.
This summer’s Festival of Discovery — July 7-9 in Uptown — will be part of the Reser’s Fine Foods American Summer Classics Series potato salad competition.
The Greenwood festival will be one of eight barbecue events that will be a part of the ASCS potato salad contest. Uptown Greenwood Development Corp. manager Angie Jones said the potato salad contest will be open to teams that are participating in the barbecue competition. Jones said she is pleased the Festival of Discovery — which this year is part of the Kingsford Points Chase — is able to be a part of the ASCS potato salad competition.
“It is quite an honor for the Festival of Discovery to be chosen over many other great events on the barbecue circuit to participate in the Reser’s Fine Foods Summer Classics Series,” Jones said. “The potato salad contest will be a great addition to our event.”
Greenwood Mayor Welborn Adams noted the “side” contests in association with the Festival of Discovery — whether a barbecue team related event like the potato salad competition or an open event like the annual hot dog eating contest — are a part of a broad mix that continue to make the festival a destination event.
“I think the side contests are crowd pleasers. I hear people talking about the hot dog competition as much as the barbecue,” Adams said. “I think you need some variety for the visitors of the festival. The side competitions and the (Blues Cruise) help keep things lively.”
When asked what he thinks makes a good potato salad, the mayor said he prefers a mix that includes firm potatoes, with small chunks of bacon, dill pickle and onions. The mayor said he prefers a mustard-based potato salad and stressed the importance of “firm” potatoes.
“Very important that the potatoes are firm and not too soft,” Adams said.
Jones said she is not picky when it comes to potato salad.
“Mayonnaise-based, mustard- based or German, I like them all,” the Uptown manager said. “But, in my opinion, the perfect complement for barbecue is Southern potato salad.”
